In a large saucepan, heat olive oil over medium heat. Add chopped onion, minced garlic, and chopped carrot, and sauté until onion is translucent.

Add orzo pasta to the saucepan and cook for 2 minutes, stirring frequently.

Stir in vegetable broth, dried oregano, salt, and black pepper. Bring to a boil and then reduce the heat to low.

Cover the saucepan and let it simmer for about 12 minutes or until the orzo is cooked and most of the liquid is absorbed.

Stir in frozen peas, chopped bell pepper, and lemon juice. Cook for an additional 2-3 minutes.
