  1. Crush the Oreo cookies and mix them with melted butter. Press the mixture into the bottom of a springform pan to create the crust.
  2. Melt the white chocolate in a microwave or double boiler. Set aside to cool slightly.
  3. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  4. In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes. Then microwave for 10 seconds to dissolve the gelatin.
  5. Gradually add the melted white chocolate and gelatin mixture to the whipped cream. Gently fold until well combined.
  6. Pour the mousse mixture over the Oreo crust in the springform pan. Smooth the top with a spatula.
  7. Refrigerate for at least 4 hours or until set.
  8. Once set, remove the cake from the springform pan and decorate with whipped cream and crushed Oreo cookies.
  9. Slice and serve chilled.
