In a mixing bowl, combine peanut butter, powdered sugar, and vanilla extract until well mixed.

Take an Oreo cookie and spread about 1 teaspoon of the peanut butter mixture on top.

Place another Oreo cookie on top to make a sandwich.

Repeat with the remaining Oreo cookies.

In a microwave-safe bowl, melt the chocolate chips and vegetable shortening in 30-second intervals, stirring in between, until smooth.

Dip each Oreo sandwich into the melted chocolate, making sure to coat it completely.

Place the coated Oreo sandwiches on a baking sheet lined with parchment paper.

Refrigerate for at least 1 hour to allow the chocolate to set.
