  1. Preheat the oven to 325°F (160°C).
  2. Crush the digestive biscuits in a food processor and mix with melted butter. Press the mixture into the bottom of a greased springform pan.
  3. In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the orange zest and fresh orange juice.
  5. Pour the cream cheese mixture over the biscuit base in the springform pan.
  6. Bake in the preheated oven for 50-60 minutes, or until the cheesecake is set but still slightly jiggly in the center.
  7. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake.
  8. In a small saucepan, melt the dark chocolate with whipping cream over low heat, stirring until smooth. Remove from heat and stir in vanilla extract.
  9. Pour the chocolate ganache over the cooled cheesecake, spreading it evenly.
  10. Refrigerate the cheesecake for at least 2 hours, or until set.
  11. Garnish with orange slices and fresh mint leaves before serving.
