Onion Soup
French onion soup originated in the 18th century and was often consumed by workers as a cheap and filling meal.
This is vegetarian and gluten free recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Heat butter in a large pot over medium heat. Add sliced onions and cook until caramelized, stirring occasionally.

Deglaze the pot with white wine, scraping the bottom to release any browned bits.

Add vegetable stock, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

Meanwhile, preheat the oven to 400°F (200°C). Slice the baguette and place on a baking sheet. Toast in the oven until crispy.

Remove the bay leaf from the soup and taste for seasoning. Adjust salt and pepper if needed.

Ladle the soup into oven-safe bowls. Top each bowl with a slice of toasted baguette and sprinkle with grated Gruyere cheese.

Place the bowls under the broiler until the cheese is melted and golden brown.
