Onion and Herb Buttermilk Biscuits

Preheat the oven to 450°F (230°C).

In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to blend the butter into the flour until the mixture resembles coarse crumbs.

Stir in the chopped onion and fresh herbs.

Make a well in the center of the mixture and pour in the buttermilk. Stir until just combined.

Turn the dough out onto a lightly floured surface and knead it gently a few times until it comes together.

Roll or pat the dough to a 1/2-inch thickness. Use a biscuit cutter to cut out rounds.

Place the biscuits on a baking sheet and bake for 10-12 minutes, or until golden brown.
