Preheat the oven to 350°F (175°C). In a mixing bowl, combine oats, all-purpose flour, baking soda, and salt. Set aside. In another bowl, cream together the unsalted butter, granulated sugar, and brown sugar. Add the egg and vanilla extract to the butter-sugar mixture and mix well. Gradually add the dry ingredients to the wet mixture, mixing until well combined. Fold in the chocolate chips. Drop spoonfuls of cookie dough onto a greased baking sheet. Bake for 10-12 minutes or until golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes. Transfer to a wire rack to cool completely. Enjoy!
