  2. In a large bowl, combine the oats, flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, mash the bananas with a fork until smooth. Add the honey, egg, milk, vegetable oil, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
