Ingredients
  • 2 cup Zucchini
  • 2 cup All-purpose flour
  • 1 cup Sugar
  • 1/2 cup Vegetable oil
  • 2 unit Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Walnuts (optional)
  • 1/2 cup Raisins (optional)
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Grate the zucchini and squeeze out any excess moisture.
  3. In a large bowl, combine the grated zucchini, flour, sugar, vegetable oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, and salt. Mix well.
  4. If desired, fold in walnuts and raisins.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Slice and serve.
