  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat the cream cheese, sugar, flour, vanilla extract, and lemon zest until smooth.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream.
  5. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 40 minutes or until the center is set and the top is lightly browned.
  7. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 2 hours.
  8. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight before serving.
  9. Serve chilled and enjoy!
