Preheat the oven to 325°F (165°C).

In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

In a large bowl, beat the cream cheese and sugar until smooth. Add the flour, sour cream, vanilla extract, and ground cinnamon. Mix well.

Add the eggs one at a time, beating well after each addition. Pour the batter over the crust in the springform pan.

Bake for 50 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven for 2 hours.

Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.

Serve chilled and sprinkle with additional ground cinnamon if desired.
