My Twice Baked Potatoes

Preheat the oven to 400°F (200°C).

Scrub the potatoes and pierce them with a fork.

Place the potatoes on a baking sheet and bake for 45-50 minutes, or until tender.

Remove the potatoes from the oven and allow them to cool slightly.

Slice off the top of each potato and scoop out the flesh into a bowl, leaving a thin shell.

Mash the potato flesh with sour cream, butter, salt, and black pepper.

Stir in the grated cheddar cheese, crispy bacon, and chopped green onions.

Spoon the filling back into the potato shells.

Place the filled potatoes back on the baking sheet and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
