Mustard Green Gratin
Mustard greens are a great source of vitamins A, C, and K, as well as calcium and iron.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the oven to 180°C (350°F).

Wash and chop the mustard greens.

In a large pan, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.

Gradually whisk in the milk until smooth. Cook for 5 minutes, stirring occasionally, until thickened.

Stir in the mustard greens, half of the grated Gruyere cheese, salt, and black pepper.

Transfer the mixture to a baking dish and sprinkle the remaining Gruyere cheese and breadcrumbs on top.

Bake for 25 minutes, or until golden and bubbly.

Let it rest for 5 minutes before serving.
