  1. Preheat the oven to 180°C (350°F).
  2. Wash and chop the mustard greens.
  3. In a large pan, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in the milk until smooth. Cook for 5 minutes, stirring occasionally, until thickened.
  5. Stir in the mustard greens, half of the grated Gruyere cheese, salt, and black pepper.
  6. Transfer the mixture to a baking dish and sprinkle the remaining Gruyere cheese and breadcrumbs on top.
  7. Bake for 25 minutes, or until golden and bubbly.
  8. Let it rest for 5 minutes before serving.
