Molten muffins are also known as lava cakes because of their gooey, molten chocolate center.

This is vegetarian recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  3. In a small saucepan, heat the milk and butter over low heat until the butter is melted. Remove from heat.
  4. In a separate bowl, whisk together the eggs and vanilla extract. Slowly pour the milk mixture into the eggs, whisking constantly.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Chop the semi-sweet chocolate into small pieces and fold them into the batter.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 12-15 minutes, or until the edges are set but the centers are still slightly jiggly.
  9. Remove from the oven and let the muffins rest in the tin for 5 minutes.
  10. Carefully remove the muffins from the tin and serve warm.
