  1. Preheat the oven to 375°F (190°C). In a large bowl, cream together the molasses, butter, brown sugar, and egg. In a separate bowl, combine the flour, baking soda, cinnamon, ginger, and salt. Slowly add the dry ingredients to the wet ingredients and mix until well combined. Shape the dough into balls and roll them in granulated sugar. Place the balls onto a lined baking sheet, spacing them at least 2 inches apart. Bake for 10-12 minutes until the edges are set but the centers are still slightly soft. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
