Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg, molasses, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in the white sugar to coat.

Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are set and the tops are cracked.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
