Truffles are named after the edible fungi of the same name because of their resemblance in shape and texture.

  1. In a heatproof bowl, melt the dark chocolate over a pot of simmering water.
  2. In a separate saucepan, heat the heavy cream until hot.
  3. Dissolve the instant coffee granules in the hot cream.
  4. Pour the coffee cream mixture over the melted chocolate and stir until smooth.
  5. Add the cocoa powder, powdered sugar, and vanilla extract to the chocolate mixture and stir until well combined.
  6. Cover the bowl with plastic wrap and refrigerate for 2 hours, or until firm.
  7. Once chilled, use a spoon or a melon baller to scoop out portions of the chocolate mixture.
  8. Roll each portion into a small ball and place on a parchment-lined baking sheet.
  9. Return the truffles to the refrigerator and let them rest for another 2 hours.
  10. Serve chilled and enjoy!
