  1. In a food processor, combine dates, hazelnuts, cocoa powder, instant coffee powder, and vanilla extract. Process until a sticky dough forms.
  2. Roll the dough into small bite-sized balls and place them on a baking sheet lined with parchment paper.
  3. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together in 30-second intervals, stirring in between, until smooth.
  4. Dip each dessert bite into the melted chocolate mixture, coating evenly. Place them back on the baking sheet.
  5. Sprinkle shredded coconut over the top of each dessert bite.
  6. Place the baking sheet in the refrigerator and let the dessert bites rest for at least 1 hour.
  7. Serve chilled and enjoy!
