Ingredients
Instructions
-
Preheat the oven to 400°F (200°C). In a large bowl, whisk together the flour, sugar, baking powder, and salt.
-
Cut the butter into small cubes and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
-
In a separate bowl, whisk together the heavy cream and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
-
Gently fold in the mixed berries.
-
Turn the dough out onto a lightly floured surface and knead it a few times until it comes together. Pat the dough into a circle about 1-inch thick.
-
Cut the dough into 8 wedges and transfer them to a baking sheet lined with parchment paper.
-
Bake for 18-20 minutes, or until the scones are golden brown.
-
Remove from the oven and let the scones cool for 10 minutes before serving.
