Preheat the oven to 350°F (175°C). Grease and flour mini loaf pans.

Grate the zucchini and squeeze out any excess moisture.

In a large bowl, mash the bananas. Add the eggs, vegetable oil, granulated sugar, and vanilla extract. Mix well.

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Gradually add the dry ingredients to the banana mixture, stirring until just combined. Fold in the grated zucchini and chopped walnuts.

Divide the batter evenly among the prepared mini loaf pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
