Ingredients
  • 300 gram Zucchini
  • 150 gram Goat Cheese
  • 2 unit Eggs
  • 1/4 cup Heavy Cream
  • 1/4 cup Parmesan Cheese
  • 1 teaspoon Fresh Thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 sheet Pie Crust
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini into thin rounds.
  3. In a bowl, mix together the goat cheese, eggs, heavy cream, Parmesan cheese, fresh thyme, salt, and black pepper.
  4. Roll out the pie crust and cut it into small circles that fit into a muffin tin.
  5. Place the pie crust circles into the muffin tin.
  6. Divide the goat cheese mixture evenly among the muffin cups.
  7. Top each tart with zucchini slices.
  8. Bake in the preheated oven for 25 minutes or until the tarts are golden brown.
  9. Allow the tarts to rest for 5 minutes before serving.
  10. Serve the mini zucchini and goat cheese tarts warm.
