  1. Preheat the oven to 160°C.
  2. Crush the digestive biscuits and mix with melted butter.
  3. Press the biscuit mixture into the base of a lined muffin tin.
  4. In a bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  5. Add the eggs one at a time, beating well after each addition.
  6. Stir in the flour.
  7. Pour the cream cheese mixture over the biscuit base.
  8. Bake in the preheated oven for 20 minutes.
  9. Remove from the oven and let it cool in the tin for 10 minutes.
  10. Transfer to a wire rack and let it cool completely.
  11. Once cooled, top each mini cheesecake with a spoonful of raspberry jam.
  12. Garnish with fresh raspberries.
  13. Chill in the refrigerator for at least 2 hours.
  14. Serve and enjoy!
