Add cold water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat the oven to 375°F (190°C).
  3. In another bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until the fruit is evenly coated.
