  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a lined muffin tin.
  3. In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
  4. Spoon fruit mince over the crust in the muffin tin. Pour the cream cheese mixture over the fruit mince.
  5. Bake for 20 minutes or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool in the tin for 10 minutes.
  6. Transfer the cheesecakes to a wire rack and let cool completely. Refrigerate for at least 4 hours or overnight.
  7. Serve with whipped cream and fresh fruits on top.
