  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a separate bowl, beat the eggs, sugar, oil, and vanilla extract together.
  5. Add the grated zucchini to the wet ingredients and mix well.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the greased loaf pan and smooth the top.
  9. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let it cool in the pan for 10 minutes.
