  1. Preheat the oven to 325°F (163°C).
  2. In a saucepan, heat the heavy cream, 1/3 cup of granulated sugar, Meyer lemon zest, and vanilla extract over medium heat until it begins to simmer. Remove from heat and let it steep for 10 minutes.
  3. In a mixing bowl, whisk the egg yolks until smooth. Gradually pour the warm cream mixture into the egg yolks while whisking continuously.
  4. Stir in the Meyer lemon juice.
  5. Strain the mixture through a fine-mesh sieve to remove any lumps or zest.
  6. Divide the mixture evenly among four ramekins.
  7. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes, or until the custard is set but still slightly jiggly in the center.
  9. Remove the ramekins from the water bath and let them cool to room temperature.
  10. Refrigerate for at least 2 hours to allow the custard to set completely.
  11. Before serving, sprinkle 1/2 tablespoon of granulated sugar evenly over each custard. Use a kitchen torch to caramelize the sugar until golden and crispy.
  12. Let the brulees sit for a few minutes to allow the caramelized sugar to harden.
  13. Serve and enjoy!
