Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the homemade sourdough starter, all-purpose flour, granulated sugar, matcha powder, baking powder, and salt. Mix well.
  3. Cut the unsalted butter into small pieces and add it to the bowl. Use your fingers or a pastry cutter to incorporate the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the eggs and vanilla extract. Add the egg mixture to the dry ingredients and mix until a dough forms.
  5. Fold in the almonds.
  6. Transfer the dough onto the prepared baking sheet and shape it into a log, about 12 inches long and 4 inches wide.
  7. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
  8. Remove from the oven and let the biscotti log cool for 10 minutes. Reduce the oven temperature to 325°F (160°C).
  9. Use a sharp knife to slice the log into 1-inch thick biscotti. Arrange the biscotti cut-side up on the baking sheet.
  10. Bake for an additional 10 minutes, then flip the biscotti over and bake for another 10 minutes.
  11. Remove from the oven and let the biscotti cool completely on a wire rack.
  12. Enjoy with a cup of tea or coffee!
