  2. In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a separate bowl, beat the cream cheese, granulated sugar, maple syrup, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the flour.
  4. Pour the cream cheese mixture over the crust in the springform pan. Sprinkle the chopped pecans on top.
  5. Bake for 55-60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake and remove the sides of the pan.
  6. Let the cheesecake cool completely, then refrigerate for at least 2 hours or overnight.
  7. Serve chilled with whipped cream on top.
