Manouri, Eggplant and Orzo Salad
Manouri cheese is a traditional Greek cheese made from the whey that is leftover from the production of feta cheese. It has a creamy texture and a slightly sweet and tangy flavor.

Cook the orzo pasta according to package instructions. Drain and set aside.

Preheat a grill or grill pan over medium heat. Slice the eggplant into 1/2-inch thick rounds. Brush with olive oil and season with salt and pepper. Grill the eggplant slices for 3-4 minutes per side, until tender and grill marks appear. Remove from heat and let cool.

In a large bowl, combine the cooked orzo, grilled eggplant, cherry tomatoes (halved), cucumber (diced), red onion (thinly sliced), fresh parsley (chopped), and fresh mint (chopped).

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.

Let the salad rest for 10 minutes to allow the flavors to meld. Serve chilled.
