Pavlova is a meringue-based dessert named after the Russian ballerina Anna Pavlova. It is believed to have been created in honor of her during one of her tours to Australia and New Zealand in the 1920s.

  1. Preheat the oven to 120°C.
  2. In a clean bowl, beat the egg whites until soft peaks form. Gradually add the caster sugar, cornstarch, white vinegar, and vanilla extract while continuing to beat until stiff peaks form.
  3. Spoon the mixture onto a baking sheet lined with parchment paper, forming individual pavlovas. Bake for 5 hours, then turn off the oven and let the pavlovas cool completely inside.
  4. In a separate bowl, whip the whipping cream and icing sugar until soft peaks form.
  5. To assemble, place a pavlova on a serving plate, top with whipped cream, diced mangoes, and blueberries. Repeat for the remaining pavlovas.
  6. Serve immediately and enjoy!
