  • 8 ounce Pasta
  • 1 cup Bell peppers
  • 1 medium Onion
  • 1 medium Zucchini
  • 1 cup Corn kernels
  • 1 cup Black beans
  • 1 cup Cheese
  • 1 cup Salsa
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Cilantro
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions, then drain and set aside.
  3. In a large skillet, sauté the bell peppers, onion, zucchini, corn kernels, and black beans until tender.
  4. In a large mixing bowl, combine the cooked pasta, sautéed vegetables, cheese, salsa, cumin, chili powder, salt, pepper, and cilantro. Mix well.
  5. Transfer the mixture to a greased casserole dish.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  7. Remove from the oven and let it rest for 10 minutes before serving.
