Grate the zucchini and onion. Squeeze out the excess moisture.

In a large bowl, combine the grated zucchini, onion, eggs, flour, salt, and pepper. Mix well.

Heat vegetable oil in a frying pan over medium heat.

Spoon the zucchini mixture into the pan, forming small pancakes. Cook for 3-4 minutes on each side, until golden brown.

Remove the latkes from the pan and place on a paper towel to drain excess oil.

In a small bowl, mix sour cream and chopped chives.
