  1. Melt the butter and let it cool.
  2. In a mixing bowl, beat the eggs and granulated sugar until pale and fluffy.
  3. Add the vanilla extract and lemon zest, and mix well.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the egg mixture, mixing until just combined.
  6. Slowly pour in the melted butter and fold gently until fully incorporated.
  7. Cover the batter and refrigerate for at least 30 minutes.
  8. Preheat the oven to 180°C (350°F) and grease a madeleine pan.
  9. Spoon the batter into the molds, filling each about 3/4 full.
  10. Bake for 10-12 minutes or until the edges are golden brown.
  11. Remove from the oven and let the madeleines cool in the pan for a few minutes.
  12. Transfer to a wire rack to cool completely.
  13. Dust with powdered sugar before serving.
