Macadamia & Apple Muffins
Macadamia nuts are native to Australia and are named after John Macadam, a scientist who first described them in the 19th century.

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

In a separate bowl, mix together the melted butter, granulated sugar, and brown sugar until well combined.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.

Gently fold in the diced apple and chopped macadamia nuts.

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
