Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.

In a separate bowl, combine the mashed bananas, chopped dates, shredded coconut, honey, egg, vanilla extract, low-fat milk, and vegetable oil.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
