Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.

In a large bowl, combine the grated zucchini, all-purpose flour, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, and salt. Mix well.

Fold in the chopped walnuts and raisins.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
