  1. Melt the white chocolate in a heatproof bowl over simmering water.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Puree the strawberries in a blender.
  4. In a small saucepan, sprinkle the gelatin over 1/4 cup of water and let it bloom for 5 minutes. Then, heat the mixture over low heat until the gelatin dissolves.
  5. In a large bowl, combine the melted white chocolate, whipped cream, pureed strawberries, dissolved gelatin, sugar, and vanilla extract. Mix well.
  6. In a food processor, crush the digestive biscuits until they resemble fine crumbs. Melt the butter and mix it with the crushed biscuits.
  7. Press the biscuit mixture into the bottom of a springform pan to form the crust.
  8. Pour the mousse mixture over the crust and smooth the top.
  9. Refrigerate the cake for at least 3 hours, or until set.
  10. Garnish with fresh strawberries before serving.
