  1. In a bowl, cream together butter and granulated sugar until light and fluffy.
  2. Add egg yolks and vanilla extract, and mix well.
  3. Gradually add all-purpose flour and ground almonds, and mix until the dough comes together.
  4. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for 1 hour.
  5. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  6. Roll out one disk of dough to about 1/4 inch thickness on a lightly floured surface.
  7. Cut out rounds using a cookie cutter and transfer them to the prepared baking sheet.
  8. Spread raspberry jam on each round, leaving a small border around the edges.
  9. Roll out the second disk of dough and cut out rounds or shapes to place on top of the jam.
  10. Press the edges to seal the cookies together.
  11. Bake for 20-25 minutes or until golden brown.
  12. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  13. Dust with powdered sugar before serving.
