Linzer Bars are a variation of the traditional Linzer Torte, which originated in Linz, Austria in the 17th century. The Linzer Torte is considered one of the oldest-known cake recipes in the world.

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the all-purpose flour, ground almonds, granulated sugar, and salt.
  3. Cut the cold unsalted butter into small cubes and add it to the flour mixture. Use your hands or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk together the egg yolk and lemon zest. Add the egg mixture to the flour mixture and mix until the dough comes together.
  5. Press two-thirds of the dough into the bottom of a greased 9x9-inch baking dish.
  6. Spread the raspberry jam evenly over the dough.
  7. Take the remaining dough and roll it into small balls. Flatten each ball slightly and place them on top of the jam.
  8. Bake in the preheated oven for 30 minutes, or until the edges are golden brown.
  9. Remove from the oven and let it cool in the baking dish for 1 hour.
  10. Once cooled, dust the Linzer Bars with powdered sugar.
  11. Cut into squares and serve.
