In a saucepan, melt the butter over medium heat. Add the sugar, heavy cream, honey, and salt. Stir until the sugar is dissolved.

Increase the heat to medium-high and bring the mixture to a boil. Cook, stirring frequently, until the mixture reaches 248°F (120°C) on a candy thermometer.

Remove the saucepan from the heat and stir in the licorice extract and vanilla extract.

Pour the caramel mixture into a greased baking dish and let it cool for 1 hour.

Sprinkle the sea salt flakes over the caramel and let it set for another 2 hours.

Cut the caramel into small squares and wrap them in wax paper.
