Lemon Muffin Top Cookies
Muffin top cookies get their name from their resemblance to the top of a muffin, with a crispy exterior and soft interior.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg, lemon zest, lemon juice, and vanilla extract. Mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound of dough slightly with the back of a spoon.

Bake for 10-12 minutes, or until the edges are golden brown.

Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Once cooled, dust the cookies with powdered sugar.
