Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Gently fold in the blueberries and lemon zest.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

While the muffins are baking, prepare the lemon glaze by whisking together the powdered sugar and lemon juice.

Once the muffins are done, remove them from the oven and let cool for 5 minutes.

Dip the tops of the muffins into the lemon glaze.

Allow the glaze to set for a few minutes before serving.
