Boil the pierogi shells according to package instructions. Drain and set aside.

Peel and boil the potatoes until tender. Drain and mash them.

In a pan, melt the butter and sauté the onion until golden brown.

Add the mashed potatoes, sour cream, salt, and pepper to the pan. Mix well.

Preheat the oven to 350°F (175°C).

Stuff each pierogi shell with the potato filling and place in a baking dish.

Bake for 20 minutes or until the shells are golden brown.

Serve hot with sour cream or your favorite sauce.
