Preheat the oven to 325°F (163°C).

In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) pie dish to form the crust.

In a large mixing bowl, beat the cream cheese, granulated sugar, lemon zest, lemon juice, and vanilla extract until smooth and creamy.

Spread half of the cream cheese mixture over the crust.

Spread the crushed pineapple over the cream cheese layer.

Spread the remaining cream cheese mixture over the pineapple layer.

Bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly.

Remove from the oven and let cool to room temperature.

Refrigerate for at least 3 hours, or until set.

In a chilled mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.

Spread the whipped cream over the chilled pie.
