  1. In a saucepan, combine the milk, heavy cream, lavender buds, and half of the granulated sugar. Heat over medium heat until hot but not boiling, stirring occasionally. Remove from heat and let steep for 10 minutes.
  2. In a separate bowl, whisk together the egg yolks and the remaining granulated sugar until pale and fluffy.
  3. Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly.
  4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  5. Remove from heat and strain the mixture through a fine mesh sieve into a clean bowl.
  6. Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or overnight.
  7. Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions.
  8. While the ice cream is churning, toast the almonds in a dry skillet over medium heat until fragrant and golden brown. Remove from heat and let cool.
  9. Once the ice cream is done churning, fold in the toasted almonds.
  10. Transfer the ice cream to a lidded container and freeze for at least 2 hours or until firm.
  11. While the ice cream is freezing, preheat the oven to 350°F (175°C). Cut the figs in half and place them cut-side up on a baking sheet. Drizzle with honey.
  12. Bake the figs for 10 minutes or until soft and slightly caramelized.
  13. Serve the lavender and toasted almond ice cream with warm figs on top.
