Lamingtons are named after Lord Lamington, who served as the Governor of Queensland, Australia, from 1896 to 1901.

  1. Preheat the oven to 350°F (175°C). Grease and line a square baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Add the vanilla extract and eggs, one at a time, beating well after each addition.
  4. Gradually add the flour mixture to the butter mixture, alternating with the milk. Mix until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the pan and let it cool completely on a wire rack.
  7. Once the cake is cool, cut it into squares.
  8. In a shallow bowl, combine the desiccated coconut and icing sugar. In a separate bowl, whisk together the cocoa powder and boiling water until smooth.
  9. Dip each cake square into the cocoa mixture, making sure it is fully coated. Then roll the square in the coconut mixture, pressing gently to adhere.
  10. Place the coated lamingtons on a wire rack to set for at least 1 hour before serving.
