Lamingtons are named after Lord Lamington, who served as the Governor of Queensland, Australia, from 1896 to 1901.

  1. Cut the sponge cake into 12 equal squares.
  2. In a bowl, mix the icing sugar, cocoa powder, butter, milk, and vanilla extract to make the chocolate icing.
  3. Dip each sponge cake square into the chocolate icing, making sure to coat all sides.
  4. Roll the chocolate-coated sponge cake squares in desiccated coconut.
  5. Place the lamingtons on a wire rack and let them rest for at least an hour.
  6. Once the lamingtons have rested, cut a slit in the side of each square and fill with raspberry jam.
  7. Serve and enjoy!
