Preheat the oven to 350°F (175°C).

In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of 6 tartlet pans.

In a separate bowl, whisk together the egg yolks, sweetened condensed milk, and key lime juice until well combined.

Pour the lime mixture into the tartlet pans.

Bake for 15 minutes, or until the edges are set and the center is slightly jiggly.

Remove from the oven and let cool at room temperature for 30 minutes.

Refrigerate for at least 1 hour to set.

Before serving, top with whipped cream and sprinkle with lime zest.
