  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Press the mixture into the bottom of lined cupcake tins.
  3. In a separate bowl, whisk together lime zest, lime juice, eggs, sweetened condensed milk, and remaining granulated sugar until well combined.
  4. Pour the lime mixture over the crust in each cupcake tin, filling them about 3/4 full.
  5. Bake for 15-20 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let cool in the tins for 10 minutes.
  7. Transfer the cupcakes to a wire rack to cool completely.
  8. Once cooled, refrigerate for at least 1 hour.
  9. Before serving, top each cupcake with a dollop of whipped cream and garnish with a lime slice if desired.
