Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lime zest and lime juice.
  4. Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the dry ingredients.
  5. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer the cakes to a wire rack to cool completely.
  8. For the lime cream filling, beat the heavy cream, powdered sugar, lime zest, and lime juice together until stiff peaks form.
  9. Place one cake layer on a serving plate. Spread the lime cream filling evenly over the cake. Top with the second cake layer.
  10. For the lime glaze, whisk together the powdered sugar and lime juice until smooth. Drizzle the glaze over the top of the cake.
  11. Garnish with lime slices.
  12. Let the cake rest for 1 hour before serving to allow the flavors to meld together.
  13. Slice and serve.
